Fruit Pulp Cookies

Growing up very poor i was taught to never throw food away because we couldn't afford to replace it. As I've gotten older, I've kept that lesson close to my heart and even being a juicer I always tried to find a way to use the pulp left over from fruits and veggies.

This is a great recipe and I've used it many times for a quick treat that's more nutritional than other cookies and uses the pulp that I'm left with from juicing.
