I was given this recipe by my good friend's daughter, Kelsey. She says "omg they are delicious!" So of course, I just had to have the recipe. She also told me they are named for Jupiter's moon, Europa. Maybe because they are out of this world!?! They certainly are scrumptious and addicting! So make a batch and call some friends over!

Ingredients For europa bars

  • 18 1/4 oz
    box white cake mix
  • 2 c
    oatmeal
  • 1/2 c
    brown sugar, firmly packed
  • 1 lg
    egg
  • 1 c
    vegetable oil
  • 16 oz
    caramel ice cream topping

How To Make europa bars

    Preheat oven to 350 degrees F. Spray 13 x 9 baking pan with nonstick coating.

    In a large bowl, combine cake mix, oatmeal and brown sugar until well blended.

    Stir in egg and oil until well blended.

    Press half of dough into bottom of prepared pan; press to edges and make an edge.

    Spread caramel sauce over dough in pan. Crumble remaining dough on top of caramel sauce.

    Crumble remaining dough on top of caramel sauce.

    Bake in preheated oven for 30 minutes. Allow to cool entirely before slicing. ENJOY!
