Espresso Cookies

If you love love espresso as much as I do, the one word for these cookies is "YUM".

Ingredients

11/2 c
all purpose flour
1/2 c
cocoa
1 Tbsp
instant espresso coffee
1 c
butter, room temp
1 tsp
vanilla
3/4 c
confectioners sugar

Step-By-Step

1Preheat oven to 350.
Sift flour, cocoa and espress, set aside
2In a bowl cream butter, confectioners sugar and vanilla. Add flour little at a time, scraping down the sides.
3Roll about 2 tablespoons of dough into a ball and place on cookie sheet about 2 inches apart. After sheet is filled, using a fork press into dough.
Bake about 12-15 minutes, should be firm. Cool on rack
