OMG...I am in heaven with the finding of this recipe! I love the girl scouts Do Si Dos...So I set forth to find a recipe for them and here is what I got...found the same recipe on many sites, so figured it was the one!!! YES the baking powder and soda are suppose to be tablespoons not teaspoons... I found these to be a lil on the salty side, next time I would NOT add the salt. And I like salt... Enjoy!!! A friend just stopped over, I handed her a cookie and she helped herself to a couple more and said my do si dos are far better than the girl scouts...shhh don't tell them that!

Ingredients For do-si-dos...w/o the girl scouts

  • 2 1/4 c
    flour
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt, optional
  • 1 1/2 c
    butter, softened
  • 3/4 c
    peanut butter
  • 1 c
    brown sugar
  • 1 c
    sugar
  • 3
    eggs
  • 1 tsp
    vanilla
  • 1 1/2 c
    oatmeal
  • FILLING:
  • 1 1/2 c
    creamy peanut butter
  • 1/2 c
    butter, softened
  • 1/2 c
    powdered sugar

How To Make do-si-dos...w/o the girl scouts

    Preheat oven to 350. In a medium bowl, sift together flour, bk powder, bk soda and salt. Set aside.

    In mixer large bowl cream together butter and peanut butter. Add sugars and beat until fluffy. Then add eggs one at a time, blending well after each addition. Mix in vanilla. On low speed, mix in flour mixture then the oats until just mixed well.

    On cookie sheets, drop teaspoonfuls (I used my smallest cookie dough scoop) of batter, 2" apart to allow for spreading. Bake 10 minutes at 350, remove from oven when golden brown. Cool on sheet 5 minutes. Then transfer to to wire racks to cool completely. When cool make a the filling.

    Filling; in a medium bowl whisk together peanut butter, butter and powdered sugar until smooth and creamy. Spoon 2t of filling on bottom side of half the cookies. Then top with another cookie... I placed the filling into a ziploc freezer bag, one quart size, snipped the corner off and squeezed filling onto cookies...just a lil quicker to me.
