Aunt Eleanor started making these when she was working in the 60's. They are so easy to make. A little sticky rolling them into balls and then the coconut but Oh So Worth It. If you love dates and want a cookie that is not real sweet, this is the one for you.

Ingredients For ding bats

  • 2
    eggs
  • 1 c
    sugar
  • 1 1/2 c
    copped dates
  • 1/4 c
    butter, room temperature
  • 1 tsp
    vanilla extract
  • 1/4 c
    chopped nuts
  • 1/4 tsp
    salt or sea salt
  • 3 c
    rice krispies

How To Make ding bats

  • 1
    In a double boiler, slowly boil all ingredients except Rice Krispies turning for 10 min. Remove from heat.

    Stir in 3 cups Rice Krispies. I usually put the Rice Krispies in a larger bowl and por the mixture over it and mix it together.

    Drop from Teaspoon into coconut and form into balls. Enjoy!
