Crispy Oat Cookies

Absolutely Delicious! A friend of mine made these bite sized cookie's for me to take on a ladies weekend retreat to Mytrle Beach. They were such a huge hit with everyone I have to share her recipe with her blessing of course.You will even eat the crumbs at the bottom of the bag.

butter, softened
1 c
1 c
light brown (packed) sugar
2/3 c
vegetable oil
1 tsp
3 1/2 c
all-purpose flour
1 tsp
baking soda
1 c
regular oats (old fashioned)
1 c
corn flakes (crushed)
1/2 c
flaked coconut
1/2 c
nuts (pecan) chopped


1Preheat Oven 325.Cream butter and sugar and beat well(mixer). Add egg and beat. Add oil and vanilla and mix well; combine flour and soda, and add to cream mixture. Stir in oats, (crushed)corn flakes, coconut, and chopped nuts. Roll in one inch balls, Place on an ungreased cookie sheet; flatten with fork. Bake at 325 for 15 minutes. (Light golden color). Once cool place in a zip lock bag to keep freash. Makes 17 dozen.
