This was my Grandma Bure's recipe and she made it for me when I was a little girl. Yep, I loved chocolate even then. I remember making this in the kitchen with my mom and with my own children as they were growing up. It still remains a family favorite. Recently I made 4 batches that were consumed by my daughter's college soccer team. They didn't last long. Enjoy!

Ingredients For congo cookies

  • 2 3/4 c
    flour
  • 2 1/2 tsp
    baking powder
  • 2/3 c
    butter or margarine
  • 2 1/4 c
    brown sugar
  • 3
    eggs
  • 1 tsp
    vanilla
  • 1 tsp
    salt
  • 1 pkg
    7 oz of chocolate chips
  • 1 c
    pecans (optional)

How To Make congo cookies

    Stir together flour, baking powder and salt and set aside.

    In another bowl, melt butter and add brown sugar. Mix well.
  • 3
    Cool slightly and add 1 egg at a time, beating well after each addition.

    Add dry ingredients to this. Finally, add chocolate chips, nuts and vanilla.

    Pour into a greased 9 x 13 pan. Bake at 350 for 35 minutes.

    When almost cool, cut into finger-length bars.
