1 c pecans, chopped
2 eggs
2 1/2 c flour
1 tsp vanilla extract

Jennifer's Notes:

This is one from one of my grandmothers, Dorothy Wadkins. She baked these for a cookie swap my mom & I threw a couple of years ago. Pretty simple, but very tasty.

Pecan Sandies, meet Snickerdoodles! These cookies are very moist and chewy... and turned out looking just perfect. 

 

Directions

Preheat oven to 350 degrees.

Mix sugars, butter, and eggs. Add vanilla and mix well. Mix in flour, then add coconut and pecans; mix well.

Roll into walnut size balls and roll in cinnamon sugar.

Bake until lightly golden brown.

First, let me say that the cookies were delicious, and my husband and friends loved them. However, I found them difficult to handle. They were very wet and hard to form into a ball so they were messy. I even baked two first to make sure they would come out OK. I'm going to make them again right now and will deal with it, but wondered if everyone is experiencing the same thing I am. My one friend who is a marvelous cook suggested that I had more pecans, and I will probably do that. Hope it works out. Thanks, Jennifer.

Thanks for the recipe, but the dough was so wet I tired of messing with it. I finally grabbed my flour and added more before I started rolling them into balls.
My only change would be to add salt and a little less sugar...the coconut pushed the sweet level over the moon!

Jennifer,these cookies are great and so easy to throw together. I had no problem with them being to wet but i did put them in the refrigerator for about 30 min so maybe that is the trick.Anytime i work with a rolled cookie i make sure the dough is chilled.Wish there would have been an approx baking time,i started out at 8 min and the last pan took about 13 min. Plan to keep this recipe in my collection. Olivia.

If you preferred to omit coconut, would you need to replace it with another ingredient? If so, what would you recommend? Personally, not a fan of coconut at all. Please share your suggestions. Thank you.

I think there is a misprint in the recipe. I think the second ingredient is supposed to be white flour...I am going to try these....Thanks.

Oh goodness these sound delicious! I love recipes using coconut and pecans! I have everything on hand so I'm gonna make them this afternoon!
