I had one of these cookies at Paradise Bakery, and when I got home I started working on my own version!

Funny story... when making the dough it was dry and a lot of coconut. We thought this may be a cookie fail. Oh boy, were we pleasantly surprised once we took a bite of these coconut chocolate chip cookies. The outside tastes like toasted coconut and the edges even get a little crisp. Inside, though, is nice and gooey. These cookies don't spread much, so place the cookie how you want it to bake. This cookie is a coconut lovers dream!

Ingredients For coconut chocolate chip cookies

  • 3/4 stick
    butter-flavored Crisco
  • 1 1/4 c
    firmly packed brown sugar
  • 2 Tbsp
    milk
  • 1 Tbsp
    vanilla extract
  • 1 lg
    egg
  • 1 3/4 c
    all-purpose flour
  • 1 tsp
    salt
  • 3/4 tsp
    baking soda
  • 1 pkg
    milk chocolate chips (6 oz)
  • 1 pkg
    flaked coconut (14 oz)

How To Make coconut chocolate chip cookies

  • Shortening, brown sugar, milk, vanilla, and egg creamed in a bowl.

    Preheat oven to 375 F. Cover cookie sheet with aluminum foil and spray with non-stick cooking spray. Combine shortening, brown sugar, milk, and vanilla in a large bowl. Beat with an electric mixer on medium speed until well mixed. Beat in egg and continue to beat until mixture is creamed.
  • Flour, salt, and baking soda in a bowl.

    Combine flour, salt, and baking soda in a separate large bowl.
  • Adding flour to the wet mixture.

    Mix flour mixture into shortening mixture until just blended.
  • Stirring in coconut and chocolate chips.

    Stir in coconut and chocolate chips.
  • Balls of dough dropped onto a baking sheet.

    Drop by large tablespoonfuls onto a cookie sheet.
  • Cookies baking in the oven.

    Bake 9-10 minutes or until golden brown around the edges.
  • Coconut Chocolate Chip Cookies on a cooling rack.

    Cool 5 minutes on a baking sheet on a cooling rack. Remove to rack to cool completely.
