Citrusy, cream-filled gingerbread cookie sandwiche

These are so yummy!
A nice tang of citrus goes nicely w/ the flavor of gingerbread.

Ingredients

1
14.5 oz pkg, soft gingerbread cookie mix
1 Tbsp
lemon zest
2 Tbsp
lemon juice
4 oz
reduced-fat cream cheese, softened
1/4 c
granulated splenda

Step-By-Step

1Heat oven as directed on cookie pkg. Line a lg baking sheet or 2 w/ parchment paper. Make cookie dough as directed on pkg. Divide dough into 24 cookies, bake as directed and cool.
2In bowl, blend together lemon zest, lemon juice, cream cheese and splenda until smooth.
3Place 2 tsp of cream cheese mix onto the bottom side of 1 cookie, top w/ another cookie to make a sandwich. Repeat w/ cream cheese mix and remaining cookies.
