I was looking for a way to use up browning bananas and I am not a huge fan of banana bread. I also, used Ben&Jerry's ice cream for my inspiration!

pinch tips: How to Debone a Chicken


3 cups all-purpose flour
1 1/4 teaspoon baking powder
1/2 teaspoon of salt
1/4 teaspoon of baking soda
1/2 cup white sugar
1/2 cup brown sugar splenda
2/3 cup butter, softened
2 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon banana extract
1 cup mashed bananas (about 3)
1/2 cup toasted coconut
1/2 cup toasted walnuts, chopped
1 cup milk chocolate chips

Directions Step-By-Step

Preheat oven to 400 degrees F (200 degrees C). Grease cookie sheets. Sift the flour, baking powder, salt, and baking soda together, and set aside.
Cream the butter with the sugar until light and fluffy. Beat in the eggs and vanilla. Mix in the mashed bananas.
Add the flour mixture, and stir until just combined. Stir in the chocolate chips, coconut, and walnuts. Drop by spoonfuls onto prepared cookie sheets.
Bake in preheated oven for 12 minutes.

I haven't tried 100% Splenda.... just the 1/2 brown sugar version. Let me know how it turns out if you try it though!

Sounds like a great cookie ... very creative!
I just don't understand the point of the brown-sugar splenda, when the remaining ingredients call for regular white sugar, chocolate, butter, etc. Did this just happen to be all you had on hand when putting this recipe together?

I did it cause I wanted to.
Both my parents are diabetic so, one has to be careful... I don't like the taste of Splenda usually in my baked goods. So, I tried it and I wasn't able to tell the difference in these cookies. The original recipe called for plain ol regular sugar.

You forgot to mention when to add the coconut and walnuts. I found another recipe online and got the information but you might want to add it to your reicpe here for the readers.

Brandi, Girl these are the BEST banana cookies I ever had and Chunky Monkey is a great name, these are addicting and thank God I go to the gym because they are toooo good. Have you used this recipe with any other fruit because you mentioned strawberries? My husband is so happy I made them. Thanks Girl.

Made again, threw in some white chunks, dark chocolate chips, milk chips and only used coconut and banana extracts!
