2 1/4 c confectioners sugar
1 c butter
1 1/4 c all-purpose flour
1/4 c light corn syrup
1 c chopped pecans
1/4 c dried cranberries

Stephanie's Notes:

I added this to my Christmas cookie list about four years ago - they were a big hit. I've been making them ever since. It's so hard to stop eating them!

 

Directions

Mix creamed butter and confectioners sugar until light and fluffly.

Beat in corn syrup. Slowly beat in flour and mix well.

Fold in pecans and cranberries.

Form dough into two 6 inch logs and wrap each log in plastic wrap. Chill for at least 2 hours or until firm.

Unwrap and cut into 1/4 inch slices. Place each cookie about 3 inches apart on an ungreased foil lined baking sheet.

Bake at 350 for 11-12 minutes or until center and edges are browned and lacy. Make sure you the cookies have completely cooled before removing them from the foil.

I can imagine these are pretty and delicious! I am thinking I should make them...I have everything but the corn syrup. I really don't need anymore cookies (I have baked tons plus I still have more dough in the fridge), but these would be beautiful on a platter.

Thanks Sea. They are beautiful on a platter, but they won't last long. They are so good! I'm right there with you, I have already baked so many goodies, but I just keep adding :)

I will definitely try this recipe. I have had the ones made with oatmeal before and didn't think there were lace cookies not using the oatmeal. Something new for me. Thanks

Can you use parchment paper instead of foil?

Hi Donna,

I just spoke with a friend regarding your question. She is an expert at baking. She said yes you could use parchment instead of foil.

Yes, I tried using parchment paper just last week and it worked out well.
