Chocolate Zucchini Cookies
unsweetened cocoa powder
white chocolate chips
Preheat oven to 350 degrees. Grease cookie sheets.
In a medium bowl, cream the shortening and sugars until smooth. Beat in the egg and vanilla.
Combine the flour, cocoa, baking soda, and salt; gradually stir into the creamed mixture. Fold in the zucchini and chocolate chips.
Drop by rounded spoonfuls onto prepared cookie sheets. Bake 10-12 minutes. Allow cookies to cool.
