Janet's Notes:

I was in the kitchen searching for ingredients to make PMS Cookies when I realized I didn't have all of the ingredients. However, I did have ritz crackers, crunchy peanut butter and chocolate morsels. So I decided why not. My hubby took one bite and said these taste just like Butterfinger candy bars and oh my goodness he was right. They are so easy to make and awesome to eat!

Directions

1
Spread crunchy peanut butter as thick as desired onto a ritz cracker. (I made mine about 1/4 of an inch thick)
2
Sandwich together.
3
Melt chocolate morsels in double boiler.
4
Dip sandwiched crackers into chocolate, covering completely.
5
Place dipped cookies onto wax paper as you go and allow them to harden. *I placed wax paper in a dish and put them into the freezer for about 10 minutes for quicker set up. Stored mine in a Ziploc bag in the refrigerator. Yummy, enjoy!

Hi Janet,
Congraulations on your blue ribbon. I was just sitting here needing "a fix" and I remembered saving your PMS cookie recipe months ago because it sounded so good and FAST and EASY.
Anyway -- the thought just popped into my head -- I wonder what they would taste like if I added marshmellow cream. It's just a thought. Another thing good for PMS! lol.
