Ingredients

1/2 c butter, softened
1 c plus 1 tsp sugar, divided
1 c light brown sugar, tightly packed
2 eggs
2 tsp vanilla extract
2 1/4 c all purpose flour
3/4 c baking cocoa
1 tsp baking soda
1 c chopped pecans, divided by 1/2 cup
1 pkg 13 oz package rolo candies
1 c peanut butter
1/2 c semi-sweet mini chocloate chips

When a friend was describing what the perfect cookie would be if it existed, I decided to create a recipe to give her as a Christmas present. The following recipe is what I came up with and was a huge hit with her and her family.

Whoa...what an ingredient combo! What a great surprise when you bite into the middle of a scrumptious cookie and find even more scrumptious caramel!

Preheat over to 375 degrees.

In large mixing bowl, cream butter, peanut butter, 1 cup sugar and brown sugar until well blended. Beat in eggs and vanilla. Combine flour, cocoa and baking soda in a separate bowl; gradually add to creamed mixture just until combined. Stir in 1/2 cup pecans and mini chocolate chips.

Shape dough by tablespoonfuls around each Rolo. In a small bowl, combine remaining pecans and sugar; dip each cookie halfway into pecan mixture

Place cookie nut side up on ungreased baking sheets. Bake for 7-10 minutes or until top is slightly cracked. Cool for 3 minutes; remove to wire racks to cool completely.

Wow, congratulations Cathi, on your blue ribbon...I am going to have to close my eyes, so I do not see how good they look..I can not make another dessert right now! I am going to save for later.

Wow! Made these with my kiddos and they were the BEST ever! Excellent combo! Tip: Excellent warmed up in microwave for 15-20 seconds. Gets the gooey oozing again. So yum!
