Ingredients For chocolate caramel cookies

1 cbutter

1/2 cconfectioners' sugar

1 3/4 call purpose flour

1 tspvanilla extract

1 tspalmond extract
- FOR THE CARAMEL LAYER:

1 cbutter
-
1 cbrown sugar, light
-
12 Tbsplight corn syrup
-
1 tspsalt
-
4 Tbspsugar
-
4 Tbspheavy cream
-
1 1/2 tspvanilla extract
- CHOCOLATE COATING:

12 ozchocolate bark candy coating or chocolate chips, melted
How To Make chocolate caramel cookies

1For the cookie: Cream the butter and confectioners sugar together until well blended. Add the flour and extracts and blend until well combined.

2Form into a log shape and slice cookies into about 1/4 inch slices.

3Place on a baking sheet an inch apart and bake in a 250* oven for 20 minutes. Allow to cool.

4For the caramel layer: Combine all of the caramel ingredients except the vanilla in a heavy pot. Cook stirring it until it reaches 250* .

5Take it off of the heat and stir in the vanilla. It may spatter.

6Place a dollop of caramel on each cookie and place them in the freezer to cool.

7Meanwhile, melt the chocolate for coating. You can do this in a double boiler or in the microwave.

8Take the cookies out of the freezer and coat them in the chocolate.

9Store in an air-tight tin.
