Ingredients For chocolate caramel cookies

  • 1 c
    butter
  • 1/2 c
    confectioners' sugar
  • 1 3/4 c
    all purpose flour
  • 1 tsp
    vanilla extract
  • 1 tsp
    almond extract
  • FOR THE CARAMEL LAYER:
  • 1 c
    butter
  • 1 c
    brown sugar, light
  • 12 Tbsp
    light corn syrup
  • 1 tsp
    salt
  • 4 Tbsp
    sugar
  • 4 Tbsp
    heavy cream
  • 1 1/2 tsp
    vanilla extract
  • CHOCOLATE COATING:
  • 12 oz
    chocolate bark candy coating or chocolate chips, melted

How To Make chocolate caramel cookies

    For the cookie: Cream the butter and confectioners sugar together until well blended. Add the flour and extracts and blend until well combined.

    Form into a log shape and slice cookies into about 1/4 inch slices.

    Place on a baking sheet an inch apart and bake in a 250* oven for 20 minutes. Allow to cool.

    For the caramel layer: Combine all of the caramel ingredients except the vanilla in a heavy pot. Cook stirring it until it reaches 250* .

    Take it off of the heat and stir in the vanilla. It may spatter.

    Place a dollop of caramel on each cookie and place them in the freezer to cool.

    Meanwhile, melt the chocolate for coating. You can do this in a double boiler or in the microwave.

    Take the cookies out of the freezer and coat them in the chocolate.

    Store in an air-tight tin.
