Ingredients

1 c
butter
1/2 c
confectioners' sugar
1 3/4 c
all purpose flour
1 tsp
vanilla extract
1 tsp
almond extract

FOR THE CARAMEL LAYER:

1 c
butter
1 c
brown sugar, light
12 Tbsp
light corn syrup
1 tsp
salt
4 Tbsp
sugar
4 Tbsp
heavy cream
1 1/2 tsp
vanilla extract

CHOCOLATE COATING:

12 oz
chocolate bark candy coating or chocolate chips, melted

Step-By-Step

1For the cookie:

Cream the butter and confectioners sugar together until well blended. Add the flour and extracts and blend until well combined.
2Form into a log shape and slice cookies into about 1/4 inch slices.
3Place on a baking sheet an inch apart and bake in a 250* oven for 20 minutes. Allow to cool.
4For the caramel layer:

Combine all of the caramel ingredients except the vanilla in a heavy pot. Cook stirring it until it reaches 250* .
5Take it off of the heat and stir in the vanilla. It may spatter.
6Place a dollop of caramel on each cookie and place them in the freezer to cool.
7Meanwhile, melt the chocolate for coating. You can do this in a double boiler or in the microwave.
8Take the cookies out of the freezer and coat them in the chocolate.
9Store in an air-tight tin.
