Ingredients

1/2 c
vegetable shortening
1 1/2 c
cooked pumpkin
2 1/2 c
flour, less 2 teaspoons
4 tsp
baking powder
1 c
raisins or dates
1 c
chopped nuts
1 tsp
lemon extract
2 eggs
1 1/4 c
brown sugar
1/2 tsp
salt
1/2 tsp
nutmeg
1/4 tsp
ginger
1/2 tsp
cinnamon

Directions Step-By-Step

Cream shortening and sugar. Add eggs, pumpkin, salt,nutmeg, ginger, and cinnamon blend well.

Sift dry ingredients flour, baking powder together and add to pumpkin mixture. Blend until smooth.

Stir in raisins, nuts, and lemon extract.

Drop by teaspoons onto greased cookie sheet.

Bake at 400 degrees for 15 minutes.

Yield: Approximately 3 dozen cookies.
