These are some of my husbands favorites! They bake up so soft and chewy, you won't be able to eat just one!

Ingredients For chewy oatmeal cookies

1 cmargarine (i use imperial sticks)

1 cbrown sugar

1 cgranulated sugar

2 lgeggs
-
3/4 tspsalt
-
1 tspbaking soda
-
2 call purpose flour
-
3 coatmeal
-
1 tspvanilla
-
1/2 tspcinnamon
-
1 ccoconut
-
1 cnuts (walnuts, almonds, pecans...etc.)
How To Make chewy oatmeal cookies

1Preheat oven to 350 degrees.

2Combine margarine, brown sugar and granulated sugar. Beat together with mixer until well blended.

3Add eggs and beat well.

4Sift flour, salt, baking soda and cinnamon together in separate bowl.

5Add to creamed mixture and stir until well blended.

6Put oatmeal into blender or small food processor. Blend well. Do the same for the coconut and nuts.

7Add to batter, mix well. Batter will be stiff.

8Roll out cookies with your hands and press down on greased cookie sheet.

9Bake for about 8 to 10 minutes or until lightly golden brown. Cool on waxed paper or paper towels until completely cool before storing.
