Soft and chewy, with a good spicy molasses flavor. These cookies are a harbinger of the holidays. Yes, you can make them any time of the year, but to me . . . they scream "Christmas!"

Ingredients

3/4 c
butter-flavored shortening
1 c
brown sugar, firmly packed
1
egg
1/2 c
molasses
2 1/2 c
all purpose flour
1/2 tsp
salt
2 tsp
baking soda
1/2 tsp
ground cloves
1/2 tsp
ground allspice
1 tsp
ground cinnamon
1 tsp
ground ginger
granulated sugar, for rolling

Directions Step-By-Step

Cream together brown sugar and shortening. Stir in egg and molasses and mix well. Fold in dry ingredients and stir.

Preheat oven to 350°F.

Roll dough into small balls (I use a small cookie scoop) and roll in white sugar. Place on cookie sheets lined with parchment paper that's been lightly greased. Keep cookies about 2 inches apart.

Alternatively, you can use a Sil-Pat mat, if you have old cookie sheets.

Bake 8 - 9 minutes. Leave on cookie sheet 1 - 2 minutes until set then slide the parchment paper or move cookies to cooling rack and cool completely. Keep in an airtight container for about a week (if they last that long).
