My Grandma's personal favorite to have with tea every Christmas. A recipe passed down through the years and not changed one bit.

Ingredients

1 c
unsalted butter, room temperature
1 c
sugar
1
egg
2 tsp
vanilla extract
2 2/3 c
flour
1/2 tsp
baking powder
pinch
salt
1 c
candied red cherries, chopped coarsely

Directions Step-By-Step

Beat butter & sugar for about 3 minutes with an electric mixer, or until fluffy.
Add egg and vanilla and beat 1 minute more.

Mix dry ingredients in a bowl.
Add gradually to the butter mixture, making sure not to beat too much and stir in cherries by hand.

Divide the dough into thirds; roll each into a log.
Cover in waxed paper or parchment paper, then plastic wrap.
Chill overnight or freeze until ready to use, for up to a month (be sure to thaw out if frozen).

When ready to bake, preheat oven to 375 degrees. Slice into ¼” slices and bake 375 10 minutes, until barely brown.
Store wrapped in refrigerator or freeze until ready to thaw and slice.
