Note: CeCe uses the disposable foil pans for this recipe. She tells me that she makes tons of this recipe to give to neighbors during the holidays. But they wanted more of it, so she buys the cranberries to freeze and makes this recipe the whole year through. It's a real winner, with the tartness of the cranberries and the almond extract blending exquisitely with the butter and the pecans. CECE makes pans of this and freezes it ahead. It's a real winner, and one recipe that will make you famous!

Ingredients For cece's spectacular cranberry squares (tnt)

  • 3 cups sugar
  • 4 large eggs
  • 3 sticks melted butter
  • 2 teaspoons almond extract
  • 3 cups flour
  • 1&1/2 bags of fresh cranberries
  • 1 cup chopped pecans
  • 2 baking pans -- slightly greased with cooking spray (each 8x8x2")

How To Make cece's spectacular cranberry squares (tnt)

    Preheat oven to 350. In a large mixing bowl, using an electric mixer, beat eggs and sugar together until fluffy, about 2 minutes. Beat in the melted butter and almond extract. Then add the flour and stir well. Then stir in the cranberries and the pecans. Mix well. Pour the mixture evenly into the two prepared pans. Bake for 70 minutes. Make sure to test the center with a toothpick before remove from oven. Let cool at room temperature. (Can be prepared the day ahead) Cut into squares and serve. Makes about 12 per pan. OK to freeze.
