Ingredients For carrot coconut cookies

  • 1 c
    shortening
  • 3/4 c
    sugar
  • 2 lg
    eggs
  • 1 c
    mashed cooked carrots
  • 2 c
    sifted flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 3/4 c
    shredded coconut

How To Make carrot coconut cookies

  • 1
    Mix well together : shortening , sugar , eggs and mashed carrots.

    Sift together : flour , baking powder and salt ; Mix into carrot mixture.

    Add coconut to mixture.

    Drop by teaspoonfuls onto a greased cookie sheet.

    Bake @ 400° for 10-12 minutes.
