Carrot Cake Cookies with Cream Cheese Frosting

Ingredients
| 1/2 c | raisins |
| 1/4 c | oatmeal |
| 1/2 c | butter |
| 1/2 c | packed brown sugar |
| 1/2 c | sugar |
| 1 lg | egg |
| 1 c | packed finely grated carrots |
| 1 1/2 c | all purpose flour |
| 1 1/4 tsp | cinnamon |
| 1/2 c | chopped walnuts, plus extra for top |
| CREAM CHEESE FROSTING | |
| 1 c | powdered sugar |
| 1 pkg | 6 oz cream cheese |
| 1/4 c | butter |
| 2 Tbsp | heavy cream |
| 2 tsp | lemon juice |

Directions
Preheat oven to 350.
Line a cookie sheet with parchment papere.
Place oats and raisins in a small bowl and add 1/4 cup warm water. Let soak until water is absorbed (15 mins).
Beat butter and both sugars. Add eggs and the carrots.. Add flour and cinnamon. Beatto blend in.
Stir in raisin mixtyre and nuts....batter will be sticky.
Drop by lever tbsp on sheeet....about 1 1/2 - 2 inches apart. Bake until golden...20 mins. Cool...when all are baked and cooled, frost and add a walnut to the top of each one.Mix a frosting together and beat till creamy. Frost the cookies when cool.

Mine too...he's so funny my husband....he always says he doesn't like cake so I make a cake because I feel like something sweet thinking I can freeze some...(BTW...i have nothing against frozen cake believe me...had many a breakfast of frozen Sara Lee cake and pie when I was in my 20's)but I get up in the morning after he has been up in the night and half the cake is gone!!
He does love blueberrries though and would eat ANYTHING with blueberries in it!!
