Who doesn't love oatmeal cookies!? Kick them up a notch with caramel! I even add a little bit of coconut.

Ingredients

1 c
butter, softened
1 c
sugar
1 c
brown sugar, firmly packed
1 tsp
salt
1/2 tsp
baking soda
1 tsp
baking powder
1 tsp
cinnamon
2
egg
2 tsp
vanilla extract
1 1/2 c
all purpose flour
3 c
oats, uncooked
11 oz
kraft caramel bits
1 c
pecans, in pieces (toasted)
1/3 c
coconut, flaked

Step-By-Step

1Preheat oven to 350
Line baking sheet with parchment paper
2Combine butter, sugars, salt, soda, powder and cinnamon. Beat until well blended.
Add eggs, vanilla-beat until blended.
Add flour to creamed mixture and beat until blended.
Stir in oats, caramel baking bits, pecans and coconut.
3Drop by rounded teaspoon on to parchment lined baking sheet.
Bake at 350 for 11-12 min.
Allow to cool slightly before removing to cooling rack.
