This recipe originated from a former boss who brought a goodie tray to work that his wife had put together for his employees. They were so yummy that I just had to get the recipe! They have been on my holiday tray ever since and that was back in the 80's when I first acquired it. George Knoop has long since left this world for his heavenly home, but will always be a fond memory not just for these great "cookies" but also for the kind, compassionate boss that he was!

Ingredients For caramel cookie bars

  • 15
    graham crackers, whole
  • 3 stick
    butter, cold
  • 1 1/2 c
    brown sugar, firmly packed
  • 1 1/2 c
    chopped nuts
  • 2 lg
    hershey's candy bars
  • 2 Tbsp
    shortening

How To Make caramel cookie bars

    You will need 2/3 of a box of graham crackers. (2 of the 3 packages in the box.)

    Line a large jelly roll pan, or cookie sheet with graham crackers.

    Boil the butter, brown sugar and chopped nuts in a saucepan on top the stove for three minutes. Should be bubbling while stirring. You are making "caramel" so it should thicken a little. Be careful not to burn by boiling too hard or not stirring.

    Pour caramel/nut mixture over the graham crackers. Let cool and set.

    Melt 2 large Hershey Bars (7 oz) with 2 T of shortening and spread on top of cooled caramel mixture. Please be sure you melt on very low heat, and are constantly stirring or you will burn chocolate and it will stick to the bottom of the pan. Don't let it bubble! If you burn even slightly, it will taste burned. Throw and start over! Note: You may also use chocolate chips of your choice is you so desire.

    These are similar in flavor to a TWIX candy bar. You could also spread peanut butter over the graham crackers prior to the nut mixture, if you would like more of a SNICKERS taste.
