These are AMAZING cookies. I know at first thought, you might think this combination is odd, but do not be fooled by these wonderful jewels. I make these for cookie exchanges every year.

Ingredients For butterscotch sugar drops

  • 2 stick
    butter, softened
  • 1 c
    sugar
  • 2 lg
    eggs
  • 1/2 tsp
    vanilla extract
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 pkg
    butterscotch chips (11 oz)
  • 1 1/4 c
    chopped dried apricots

How To Make butterscotch sugar drops

    Heat oven to 350 degrees. Beat butter and sugar in a large bowl until well blended. Add eggs and vanilla; beat well. In a seperate bowl, stir together, flour, baking soda and salt. Gradually add flour mixture to butter mixture, beating until well blended. Stir in chips and apricots. Drop by teaspoons onto ungreased cookie sheets.

    Bake 8 to 10 minutes or until lightly browned around edges. Cool slightly; remove from cookie sheet to wire rack. Cool completely.
