    brown sugar

    quick oats
  • 1/4 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1 3/4 c
    flour
  • 1/2 c
    butterscotch chips
  • 1/2 c
    chopped walnuts
  • 1 c
    finely diced apples
  • FOR THE CHEESECAKE LAYER:

    8 ounce package cream cheese, softened
  • 1/4 c
    sugar
  • 1
    egg
  • 1 tsp
    cinnamon

How To Make butterscotch apple cheesecake cookie bars

    Cream the butter and sugar until light and fluffy. Add the eggs and beat again. Sift together the oats, salt, baking soda, baking powder, cinnamon, and flour. Slowly add the butter mixture until mixed in. Stir in the butterscotch chips, walnuts, and diced apples by hand. Spread half the batter in a greased 9×13 baking dish.

    Beat the cream cheese and sugar until creamy. Add the egg and cinnamon and beat again. Pour over the dough in the pan. Crumble the remaining cookie dough over the top of the cheesecake layer.

    Bake at 350 degrees for 25-30 minutes. Do not over bake. Remove from the oven and let cool on a wire rack for 2 hours. Refrigerate until completely chilled. Cut into 24 squares. Store in the refrigerator in a sealed container.
