Have been going through recipes in my closet. This recipe was on an index card. And, I wrote where it was from. Unlike my last few recipes, where I had no clue. It was from Power Food for Women. That doesn't mean men can't eat it too. Good for everyone!

Ingredients For healthier banana-oatmeal cookies

  • cooking spray
  • 2 c
    rolled oats
  • 1 c
    whole wheat flour
  • 1/2 c
    all-purpose flour or unbleached all-purpose flour
  • 1 1/2 tsp
    baking powder
  • 3/4 tsp
    ground cinnamon
  • 1/2 tsp
    salt
  • 1 c
    mashed, very ripe, bananas (2 large)
  • 1 lg
    egg or 1/4 cup liquid egg substitute
  • 1/3 c
    packed brown sugar
  • 2 Tbsp
    canola oil
  • 1/2 tsp
    vanilla extract
  • 3/4 c
    raisins

How To Make healthier banana-oatmeal cookies

    Preheat oven to 375°F. Spread oats on baking sheet. Bake, stirring occasionally, for 10 minutes, or just until golden brown. Set aside to cool. Leave oven turned on.

    In a medium bowl, whisk together flours, baking powder, cinnamon, and salt.

    In a large bowl, combine bananas, egg, brown sugar, oil, and vanilla. Beat with electric mixer, on medium speed, until smooth. Beat in flour mixture. Stir in oats and raisins.

    Coat baking sheet with cooking spray. Drop slightly rounded Tbs. of dough about 1 inch apart, on cookie sheet. Bake 12-14 minutes, or until bottoms are lightly browned around edges. Remove to wire rack, and cool completely. Makes 48 cookies.

    Note: Store cookies in covered container, at room temperature, for up to 2 days. After that, refrigerate or freeze them. Nutrition: One serving 50 cal, 1g fat, 4 mg chol, 35 mg sod, 9g carb, 1g fiber, 1g protein.
