Ingredients For bacon chocolate chip cookies

10 ozbacon

2 1/2 call purpose flour

1 tspbaking soda

1 tspsalt
-
1 pinchcayenne pepper

1 stickbutter, unsalted, room temperature

1 cdark brown sugar, firmly packed

3/4 csugar
-
1 Tbsppure vanilla extract
-
2 lgeggs
-
8 ozbittersweet chocolate chopped or chips
How To Make bacon chocolate chip cookies

1Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment or silicone baking mats.

2Cut the bacon into 1/2" pieces. Cook in a large skillet until golden & crispy, 6 - 8 minutes. Remove to drain on paper towels, reserving the fat. Strain the fat (to remove the bacon bits) & chill in the fridge until set.

3Whisk together the flour, baking soda, salt, baking powder & cayenne in a small bowl. With an electric mixer, beat the butter, chilled bacon fat, sugars & vanilla until light & fluffy.

4Add the eggs 1 at a time, beating well after each egg. Slowly add the flour mixture & stir to combine. Stir in the bacon & chocolate chunks.

5Drop by Tbsp onto the baking sheets, leaving 3" between each one. Bake until set, 8 - 12 minutes.
