A friend gave this recipe to me shortly after I was diagnosed with diabetes. She knew I loved anything with apples.

Ingredients For applesauce raisin cookies/diabetic friendly

  • 1/4 c
    vegetable oil
  • 1/4 c
    sugar
  • 1
    egg
  • 1 tsp
    vanilla
  • 1/2 c
    unsweetened applesauce
  • 1/2 c
    whole wheat flour
  • 1/2 c
    unbleached flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/8 tsp
    cloves
  • 1/2 c
    rolled oats
  • 1/2 c
    raisins - dark or golden

How To Make applesauce raisin cookies/diabetic friendly

    Cream the oil and sugar together. Then add the egg and beat until light.

    Next blend in the vanilla and applesauce

    Stir the flours, baking powder, baking soda, cinnamon, cloves, oats, and raisins into the creamed mixture. Blend well.

    Drop cookies onto a lightly oiled baking sheet using a teaspoon. Bake for 10 minutes at 375 degrees. Let cool on a wire rack before serving.
