Ingredients For apple-filled snickerdoodles

  • 1/2 c
    (1 stick) margarine or butter, softened
  • 1/2 c
    plus 3 tablespoons sugar, divided
  • 1/2 c
    packed brown sugar
  • 1
    egg, beaten
  • 1 1/4 c
    all-purpose flour
  • 1/2 tsp
    baking soda
  • 3 c
    apple cinnamon toasted oats cereal, crushed to 1 and 1/4 cups
  • 1 tsp
    ground cinnamon
  • 1/3 c
    apple butter (found in the jelly and jam aisle)

How To Make apple-filled snickerdoodles

    1. Preheat oven to 350 degrees. Lightly grease cookie sheet.

    2. Beat margarine, 1/2 cup sugar and brown sugar in bowl until creamy. Add egg. Mix well. Stir in flour and baking soda. Add cereal, stirring until well combined. Combine cinnamon and remaining 3 tablespoons sugar in small bowl.

    3. For each cookie, roll 1/2 level tablespoon dough into a ball. Roll ball in cinnamon-sugar mixture. Place on prepared cookie sheet. Press thumb in center of each ball to form a well. Spoon 1/4 to 1/2 teaspoon apple butter into center of each cookie.

    4. Bake 10 to 11 minutes or until light browned. let stand at least 1 minute before removing from cookie sheet. Makes 66 cookies.
