These soft lemon cookies are perfect for summer or anytime!
pillsbury moist supreme lemon cake mix
powdered sugar (approximately)
lemon - juice & zest
1Mix cake mix, oil, lemon zest, and eggs in a large bowl until dough forms. Roll into 1" balls and place 2" apart on an ungreased cookie sheet.
2Dip the bottom of a glass in the granulated sugar and flatten balls to 1/4".
3Bake at 375 for 5-7 minutes until edges are golden brown. Remove to cooling rack. (bottoms may be moist)
4After cookies are cooled, mix powdered sugar and lemon juice in a small bowl until smooth. Drizzle over the cookies and refrigerate.
