Amazing Cranberry White Chocolate Oatmeal Cookies

I have tried a few recipes for this type of cookie over the years. Finally, last Christmas, I decided to make one up myself. These were a big hit with everyone who tastes them. Enjoy!

Ingredients

1 c
plus 2 tablespoons butter
1/2 c
packed dark brown sugar
1 c
white granulated sugar
1 Tbsp
pure vanilla extract
2 large
eggs
1 1/2 c
flour
1 tsp
cinnamon, ground
1 tsp
baking soda
3 c
quick cooking oats, i like to substitute 1 cup for regular oatmeal to make the cookie chewier
1 c
dried cranberries
1 c
white chocolate chips
1/2 c
chopped dry roasted macadamia nuts (can substitute walnuts or pecans)

Step-By-Step

1Preheat oven to 350 degrees
2In one bowl mix flour, cinnemon and baking soda
3In a second bowl mix oatmeal, cranberries, white chocolate and nuts
4Cream sugars and butter in the bowl of a stand mixer until light and fluffy, scraping the sides often.
5Add eggs and vanilla beat well, scraping the sides often.
6Turn down the speed of the mixer to gradually add flour and baking soda.
7When the flour is completely incorporated slowly add the oatmeal, cranberries, white chocolate and nuts. You will have to finish stirring by hand to completely incorporate
8Drop cookies by the heaping teaspoonful onto a baking sheet at least 1 1/2 inches apart
9Bake 10-14 minutes until slightly brown where the cookie meets the pan. If you have large cookies it may be longer than this. Begin checking after 10 minutes.
