I orginally saw this recipe in a local newspaper. I've tweeked it to meet my taste bud needs. The cookies are so good. They disappear within minutes. My neighbors and friends love it when they smell these baking:)

Ingredients For almond macaroon's - connie style

  • 1 lb
    sliced almonds
  • 2 c
    sugar
  • 1/4 tsp
    sea salt
  • 1/4 tsp
    almond extract
  • 1/4 tsp
    vanilla
  • 3
    egg whites

How To Make almond macaroon's - connie style

    Heat the oven to 300 degrees.

    Finely grind almonds, sugar and salt in a food processor.

    Add the vanilla; pulse to mix.

    In another bowl, beat egg whites to soft peaks.

    Add beaten egg whites to food processor; pulse 4-5 times. The mixture should form a grainy batter.

    Wet your hands(this keeps the dought from sticking).

    Roll teaspoon of dough between your palms to make into a ball.

    Place on greased baking sheets 2-3 inches apart. Bake twenty-five minutes until golden brown. I rotate the sheets half-way through.

    Cool on wire racks
