I had written this recipe down on notebook paper, but I didn't write down, where it was from. So, I don't have a clue, but these recipes have been stored in my closet, a long time. These are called cookies, but they are squares.

Ingredients For alabama peanut pie cookies

  • 2 c
    unsifted all-purpose flour or unbleached all-purpose flour
  • 1/2 c
    sifted confectioners' sugar
  • 1 c
    cold butter, thinly sliced
  • 1 1/2 c
    firmly packed, light brown sugar
  • 6 lg
    eggs
  • 1 c
    dark corn syrup
  • 1/4 c
    melted butter
  • 2 tsp
    vanilla extract
  • 3 c
    shelled unsalted peanuts

How To Make alabama peanut pie cookies

    Preheat oven to 350°F. Grease a 10x15 jelly roll pan.

    In a bowl, mix flour and confectioners' sugar. Add sliced butter, and mix with fingers, until crumbly. Press crumbs firmly and evenly, into prepared pan.

    Beat eggs, until foamy. Beat in brown sugar, corn syrup, melted butter, and vanilla.

    Chop peanuts coarsely in food processor, and fold them, into egg mixture. Pour into pan, and spread evenly.

    Bake in oven for 40 minutes, or until filling is set. Cool in pan, then cut into 2 inch squares.
