After I couldn't find my regular pumpkin cookie recipe, I started looking for some recipes to try. I found this recipe on Allrecipes. I haven't made it yet. But, it sounds really good!

Ingredients For #1 pumpkin spice cookies

  • 2 1/2 c
    all-purpose flour or unbleached all-purpose flour
  • 1 c
    rolled oats
  • 4 tsp
    baking powder
  • 1 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    nutmeg
  • 1 tsp
    pumpkin pie spice
  • 1/2 tsp
    ground ginger
  • 1/4 tsp
    salt
  • 2 Tbsp
    butter
  • 1 1/3 c
    light brown sugar, packed
  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • 1 can
    (15 oz) pumpkin puree
  • 1/2 c
    apple butter
  • 1 c
    chopped walnuts

How To Make #1 pumpkin spice cookies

    Preheat oven to 375°F. Grease 2 baking sheets.

    Stir together, in a bowl, first 8 ingredients.

    Beat butter and brown sugar with an electric mixer, in a large bowl, until smooth. Add 1 egg, and allow it to blend into the mixture, before adding the other egg, along with the vanilla. Add pumpkin and apple butter; continue beating.

    Mix in the flour mixture, just until incorporated. Fold in walnuts, mixing just enough, to evenly combine. Drop spoonfuls of dough 2 inches apart, onto the prepared baking sheets.

    Bake, until edges are golden, about 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute, before removing to a wire rack to cool completely. Makes 56 cookies.
