Ingredients

165 g white chocolate (1 cup of white chocolate chips is 160 grams)
1 c heavy whipping cream
1 c milk
1/3 c sugar
2 egg yolks
dash(es) pure vanilla extract

Anthony's Notes:

Aside from Creme Brulee, and Cheesecake of Any flavor. Pot de Creme is my favorite dessert....EVER. So after learning a pretty basic, and quite adaptable recipe last year in Culinary Class. I experimented a little. And with being a White Chocoholic, This seemed perfect....And it was. If you never had Pot de Creme, Think of it like a Dense chocolate Mousse.
And if you don't like white chocolate? replace with any chocolate you desire!

 

Directions

In a mixing bowl, add egg yolks and sugar, and beat until light in color and at a ribbon stage.

In a sauce pot, add the Milk and Heavy cream, stir to combine and heat WITHOUT bringing to a boil.

Temper the hot milk into the egg mixture, by adding a little at a time, until you've added about half. Once half is tempered. Add the rest, and stir to combine.

Melt your white chocolate in the microwave at 20 second intervals. until all the way melted

Return the mix back to the sauce pot on a medium - low heat, cook and stir constantly for 5 -7 mins. again DO NOT BOIL.

Once 5 mins is over, add your melted chocolate and Vanilla extract and stir to combine thoroughly.

Poor into your Ramekins, tap the ramekins on a flat surface to remove any air bubbles. And refrigerate for at LEAST 4 hours

Remove and enjoy! Responsibly...Seriously...You will want all 4 to yourself. RESIST! ;)

Can I use a dark chocolate bar? I take it the chocolate can be sweetened and not a bakers chocolate bar?

So long as it is the same weight (165 g)but Also, add 1/3 cup of cocoa powder when melting the chocolate. and This will come out perfect for you :)
