On medium low speed, beat butter until light and fluffy, 1-2 minutes. Gradually beat in 1/2 cup powdered sugar. Add egg and almond extract, beat until combined. On low gradually beat in flour, then nuts until dough forms. Wrap in plastic wrap; refrigerate 1 hour. Preheat oven to 350 degrees. Line baking sheets with parchment paper. Roll level tablespoons into balls. Place 2-inchs apart on baking sheet. Bake 13-15 minutes. Cool in pans on baking rack until slightly warm 15-20 minutes. Roll in remaining powdered sugar. Makes 40 cookies.
