Soft Chocolate Frosting for Black Magic Cake

- 6 oz
- 1 oz. squares of unsweetened chocloate
- 3 large
- egg yolks
- 1 1/4 c
- 3/4 c
- 1 1/2 Tbsp
- 1 pinch
- 2 tsp
- pure vanilla extract
- 2 1/2 tsp
- instant coffee
1Melt chocolate in saucepan over hot water. Beat egg yolks in heavy saucepan until very thick. Add Sugar and beat smoothly together.
2Add milk, instant coffee and butter, stirring well. cook over very low to med.low heat, stirring constantly until it comes to a boil. Cook for 1 minute only after it reaches the boiling point.
3Remove from heat, stir in chocolate, add salt and vanilla. Beat until it reaches a good spreading concistency. It will spread nicely.
4Makes enough to use between two layers and to frost the top and sides of cake. Note: this frosting has glossy appearance and stays soft.
