This recipe came from my Mother. She made these when I was a little girl. I do something a little different and I will tell you about it but its up to you if you want to try it.Enjoy!!!!!!!!!!

Ingredients For fudgy oatmeal bars

  • 2 c
    brown sugar, firmly packed
  • 1 c
    butter, softened
  • 2 lg
    eggs
  • 1 tsp
    vanilla extract
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3 c
    quick oats
  • 12 oz
    semi-sweet chocolate chips
  • 1 can
    sweetened condensed milk, 14oz
  • 2 Tbsp
    butter
  • 1 c
    chopped nuts
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    salt
  • 1/2 c
    smooth peanut butter[ optional]

How To Make fudgy oatmeal bars

    Heat oven to 350 degrees. Grease 13x9 pan. Mix brown sugar, 1 cup of butter, eggs and 1 tsp. of vanilla in a large bowl. Stir in flour, baking soda,and 1/2 tsp. of salt.Stir in oats.Press mixture in pan.

    Heat chocolate chips, condensed sweetened milk, and 2 tlbs. butter. Now this is where I add the peanut butter.Cook in 2 quart pan on low heat til chocolate is melted.Remove from heat. Stir in nuts, 1 tsp. vanilla and 1/2 tsp. salt.Spread over oatmeal mixture. Bake till golden brown 25-30 minutes.While warm cut into bars. I occasionally keep out some of the oatmeal mixture out and then apply it the top of the chocolate.
