Ingredients

4 c roughly chopped walnuts
3 3/4 c confectioners' sugar
4 egg whites
1 1/2 Tbsp pure vanilla extract
3/4 c semi-sweet chocolate chips
3/4 c cocoa, unsweetened
pinch of salt
Pinched by lfran, and 82 more.

Preethi's Notes:

Unbelievably easy to make....light to indulge!

i volunteer at this hospital close to home... I am really glad that I have made quite a lot of friends (read: friends who are wonderful cooks too!) at work :)

That was one fine day when my co-volunteer brought this home-made treat..... Well! U guessed it right... So light, less-fatty, irresistible, decadent these cookies were... that Ever since that day, I have been making these cookies at least once a week at home for family and friends!

U should really try this out... Trust me, you ll fall in love, again!

 

Directions

Mix together all the ingredients expect egg whites in a mixing bowl. Add egg whites to the above mixture and gently fold in to form a chunky cookie dough.

Pre heat oven to 350. Line cookie pans with parchment paper. Take an ice cream scoop and gently drop scoops of cookie dough onto the paper lined pan, flattening it out each time in the shape of a cookie. Bake these cookies in the oven for 15 min.

Remove the pans from the oven and set them aside to cool.

Enjoy these cookies warm/cold with beverages/vanilla ice cream or for dessert!!

I wandered across this recipe, and I'm intrigued by it Preethi. But I wanted to double-check with you. The recipe calls for 1 cup of cocoa. That seems like SO much cocoa. I just want to be sure it isn't a typo.

Thanks a lot for pointing it out to me! I added 1 cup and it turned out fine.... Maybe I'll reduce it here to 1/2 cup for you :)

Preethi- this sound delicious- is there any oatmeal in it -it looks like there is- or is it just the nuts I see?

Sorry, there is no oat meal in it Pat! All the nuts and the chocolate chips are making it look chunky.... I wonder how oat meal would make it taste though... Interesting :))

I think dry old fashioned oatmeal would be great adding only 3 cups nuts and 1 cup of the oatmeal to it-- but I want to try it your way first..thanks for sharing...

No, Preethi, I was just checking to be sure that was the correct amount. If you used one cup of cocoa, and they turned out like the photo, I will try them with one cup, too! It sounds like a lot, but the recipe calls for a lot of powdered sugar, so that would help balance the unsweetened cocoa.

@Pat--When I saw the photo, I thought they would have oatmeal, too! They look like the "skillet cookies" my family has made forever, but these are quite different, and I'm sure the taste is different. I can't wait for an excuse to make them...maybe the next church potluck in a few weeks.

Preethi, I'm assuming that the egg whites are beaten, is it to soft peaks, or hard peaks? Sounds really yummy.

@ Pat and Jan! Yes! Go for it :)) just try them out....

@Pat Jenkins, I usually take egg whites from the eggs (not store bought egg whites packet) and mix them with the rest of the ingredients... It's pretty easy... All you have to do is mix and bake :))

As intriguing as the recipe might sound... Trust me its a piece of cake to bake!
