Mmmmmmmmmmm! So light & fluffy, but still chocolaty enough. I made this for Dad's birthday, instead of a cake. It was yummmmmmy!

How To Make dark chocolate mousse

  • 1
In large pot filled halfway with ice, add a medium metal bowl. Let bowl chill while doing next step.

In a small bowl (that is fitted into a medium pot filled with enough water so that it doesn't touch the small bowl when it is inside pot - see picture) on low simmer, add chocolate until melted. Turn off heat & let stand.
  • 3
Pour cream into ice chilled bowl & beat with hand mixer until cream forms soft peaks.
  • 4
In a bowl of standing mixer, add egg whites & beat on high until soft peaks form. Slowly add in sugar & continue beating until firm peaks form.
  • 5
Pour chocolate into egg whites mixture & fold together. Once incorporated, fold in whipped cream. Cover & refrigerate for 1 hour or longer or until set.
  • 6
Serve in parfait glasses or other dessert dishes & top with sweetened whipped cream & shave some chocolate over tops & enjoy.
