1/2 c superfine sugar
2 c milk
8 oz bittersweet chocolate, chopped

Directions

Place the chocolate in a large bowl and set aside. Beat the egg yolks and 1/2 cup of sugar with an electric mixer on high speed until pale and creamy.

Bring the milk to a boil in a pan over medium heat. When the milk is simmering, remove from heat. Pour half of the hot milk into the egg mix, whisking continuously. Pour back into the pan with remaining milk and return to the heat. Stir constantly until it begins to thicken or coat the back of a metal spoon. Remove from heat and pour over the chocolate. Stir until the chocolate has melted and the mixture is thick and smooth.

What do we do with the rest of the SUGAR? Step #1 says to beat the egg yolks with 1/3 of the sugar but never makes reference as to what or when to add the rest?????

After you beat 1/3 of the sugar into the egg yolks, beat till light and creamy, and then add the remainder. Hope this helps.

I take that back. It's a typo. It should read "beat the 1/2 cup of sugar with the egg yolks." Sorry 'bout that. I'll fix it.
