I have been making these cookies for many years. One of my patients gave me this recipe many years ago... Over the years I have tweaked it to our personal preference and I can tell you, they are literally "too die for"... the flavors of the cherries, almond, chocolate and sugar, man oh man!!!! Nothing reminds me more of Christmas than "cherries"!! If you enjoy them as well... make sure you try this recipe!! Be ready for empty platters and lots of smiles!!!

Ingredients For chocolate covered cherry cookies

    jars maraschino cherries
  • 1 c
    butter (i used unsalted)
  • 1 1/2 c
    light brown sugar
  • 1 Tbsp
    maraschino cherry juice
  • 1 Tbsp
    milk
  • 1 tsp
    vanilla
  • 1 tsp
    almond extract
  • 3 c
    all purpose flour
  • 3 tsp
    shortening
  • 2 c
    milk chocolate chips (divided)
  • 1/4 tsp
    salt

How To Make chocolate covered cherry cookies

    Start off by preheating your oven to 350F. Drain and pat dry with paper towels your maraschino cherries, once cherries are dry; add a chocolate chip into the middle of each cherry, set aside. Mix all your dry ingredient's in a bowl and set aside. In a bowl add your; butter and sugar. Beat for a few minutes till light and fluffy. Then add; vanilla, almond extract, milk and cherry juice. Add dry flour mixture and mix till thoroughly incorporated and soft dough forms. Cover and chill for 1 hour till dough is easier to handle.

    Scoop out small cookie scoops of your dough. Make into a ball, then flatten into your palm. Add your maraschino cherries into your dough. Fold the dough over and then roll into a ball.

    Bake for approximately 15-18 minutes or till set. Set on wire cooling racks to cool.

    Using the remainder of your chocolate chips and shortening, add to bowl and then microwave in 10-20 second increments (or can use a mini crockpot like I did). Once chocolate has been melted and shortening has been mixed thru thoroughly, dip baked and cooled top of cookies into the warmed melted chocolate. Set on cooling racks so chocolate hardens, and then store in an airtight container. Enjoy!!
