I went to a seminar at a friend's dojo in Melbourne about a month ago. They always have a lot of bananas at those sort of things so visitors can get some quick potassium to help aid them in their training. This time around I was sent home with a huge bundle of left over bananas, so as a result I have a bunch of banana recipes to test. These muffins are the best of that experiment!

Ingredients For chocolate- chocolate chip banana muffins

  • 2 c
    flour
  • 1 c
    sugar
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 lg
    eggs
  • 1/2 c
    unsalted butter, softened
  • 1/2 c
    creamed cheese, softened
  • 3 md
    bananas, ripened and mashed
  • 1 1/2 c
    semi-sweet chocolate chips
  • 2 Tbsp
    cocoa powder, unsweetened
  • 1 1/2 tsp
    vanilla extract
  • 1 Tbsp
    fine espresso powder
  • 1/2 c
    pecan pieces for garnish (optional)

How To Make chocolate- chocolate chip banana muffins

    Preheat oven to 350'F Grease, or line with cups, two muffin pans.

    In a small mixing bowl, cream together butter, cream cheese and sugar. Set aside.

    In a large mixing bowl combine flour, salt, baking soda, baking powder, cocoa powder and espresso powder. Set aside.

    In another mixing bowl cream eggs together with bananas. Stir in vanilla extract. Set aside.

    Add butter/cream cheese/sugar mixture to the flour mixture. With a hand blender, blend until well incorporated. Batter will be thick.

    Add banana/egg/vanilla mixture to the flour mixture and continue to blend until completely incorporated.

    Fold in chocolate chips.

    Pour batter evenly out into muffin pans. Garnish with pecans if desired. Bake for 21-28 minutes, or until a tooth pick comes out clean.
