Wash and dry strawberries. Cut in half lengthwise, keeping the leaves on. Using a teaspoon, carve out a small indentation in the middle of each strawberry halve, for the filling. Careful not to carve all the way through the strawberry. Set aside.
Beat the whipping cream until fairly stiff. Add cream cheese. Beat until incorporated. Add cocoa, chocolate syrup, sugar and vanilla. Taste. If you want it more chocolaty and / or sweet, add more chocolate and / or sugar.
Using a teaspoon and your fingers, fill each strawberry with the filling. Sprinkle the top with and garnishes, if you choose. Enjoy!
