Any cookie named "Yummy Yum-Yum's" had to be saved before I even read the recipe, Kimmi! Then, when I saw that one of the ingredients was Peanut Butter Crunch...well, it's an automatic keeper.

I think the only reason my husband is sorry the kids grew up is that he has no excuse to buy Cap'n Crunch P'nut Butter Crunch cereal. That has to be his all-time favorite food. He would sneak the box off to bed with him. Literally. I'd find pieces of the cereal down at the foot of the bed when I changed the sheets! I still have to drag him out of the cereal aisle saying, "You're a diabetic!" LOL!

This will be my early Christmas gift to him. I'll "let" him make a batch of these cookies. He will be over the moon with joy! Thanks for sharing!

Our neighbor made them for us twice. The first batch, I think I ate most of them (in one day...shhh!) & the second batch I think I let Dad have more of them. I have asked her for the recipe....I think 5 times until she finally gave it to me....but without a name! I couldn't think of anything but Yummy Yum-Yum's. LOL! They are great & will go fast, I suggest making doulbe batches!

The problem with doubling this kind of recipe is getting it out of the bowl and onto the waxed paper before it hardens...it's difficult with a SINGLE recipe. I wonder how it would work to put it in a pan and cut it into squares?

BTW, my husband says to send you his love! ♥♥♥ :D ♥♥♥

Yeah that's true. I don't know, she always made them the way they are. But I don't think that would harm anything....

Kimmi, I see one problem with this recipe. Your recipe says it serves 1-me. My husband and I are having a hard time agreeing on which one of us is ME! LOL! Luckily, as you can see in my photo, it makes a BIG plateful--this wasn't all of them, because we had already eaten, well, several, before we got them on the plate. They look almost like popcorn balls in the photo, but they're really not round.

They came out just perfectly. Easy to make, easy to get onto the paper--we used parchment paper, but waxed paper would have worked fine. I think we COULD have doubled the recipe with both of us working on it.

And they ARE absolutely YUMMY!

LOL! I see your problem...eat them all & tell him you didn't make any next time...LOL! Yes, they do look like popcorn balls & that's exactly what I thought too when our neighbor brought some over. Very addictive!!!!

They don't TASTE like popcorn balls! I can't think of anything to compare them to, really. There's just enough candy to coat them, without making them "candy." Your title pretty much says it all! (BTW, we had to use vanilla Candy Quick because we couldn't find Almond Bark anywhere...this time of year it's in high demand. It would probably taste even better with Almond Bark, but the substitute worked fine. And we could only find lightly salted peanuts, no unsalted ones. They also seemed to taste great. I hate to change a recipe the first time I make it, but we couldn't wait to try this!)

I think if you can't find Almond Bark, you can make it by adding almond extract to the vanilla bark. I'd try 1 tsp to start & taste it....

I don't think unsalted vs salted peanuts would really make a difference either.

And yes, there is nothing to compare it too! So yummy & simple to make!

I think I'm going to make them for Christmas Eve & I'm thinking about adding a little green food coloring to make them Christmasy!

Hmmm...I was wondering what I could do to make them a little more festive, but green? I don't know. I was thinking maybe some colored sprinkles or something. I think if I were going to use food coloring, I might go with red (which would, of course, come out pink!) But green food has always put me off unless it's a veggie! LOL! I will definitely use a little almond extract, though! Good idea.
