Cassie's Notes:

I got my kids involved in these little goodies tonight. Nothing like quality time.

These are simple and great tasting.

Enjoy..

Directions

1
Gather ingredients..Place wax paper in baking pan. I used a jelly roll pan.

Ps: These peanut butter balls must chill for 2 hours, then another 30 minutes before coating in chocolate.
2
In a large bowl; melt peanut butter chips in the microwave for 30 second to 1 minute. Stir till smooth.
3
Add butter, cream, vanilla..stir till smooth. Slowly add sugar till holds its shape. About 3 cups. It will be stiff like dough.
4
Cover and refrigerate 2 hours. Roll into 1 inch balls; place on wax paper covered tray. Refrigerate another 30 minutes.
5
In another bowl; melt chocolate chips with shortening in microwave 30 to 60 seconds. Stir till smooth.
6
Dip the balls in chocolate. You can roll or sprinkle with nuts, cookie crumbs, candy sprinkles.. I ground walnuts fine in my food processor. Or you can just leave as is.

I would love to! You would laugh if you saw my kitchen. As my dear mother-in-law used to say, "There isn't enough room to swing a cat by the tail!" I live in a very small one-bedroom apartment--only 600 sq. ft.--and my kitchen, well, I will try to send a picture. Here is a link where you can see the floor plan of the one bedroom, one bath:

I hope this works!

If you can see that, you can tell that my kitchen consists of the bare minimum appliances against one wall. The opposite wall, where one might put the kitchen table, holds my desk and computer because that's the only place I have room. So, I have no kitchen table. There is virtually no room to do any proper cooking! So, yes, I would love to join you in your huge kitchen--it would be heaven! I enjoy cooking at my son's house during the holidays because he has a kitchen about three times the size of mine.
