1Take about 1 T. of mashed potato(plain potato-no added milk or salt or butter). Add confectioners' sugar until it forms a ball. Add more potato and sugar depending on how much you want to make. Knead the ball until nice and smooth. Roll it out on saran wrap until about 1/8" thick.
2Spread an equal thickness of peanut butter onto the sugar mixture. Roll up into a log and keep covered in saran wrap. Place in refrigerator to harden up a bit- about 15 mins.
3Take out and slice into inch pieces. Enjoy!
