Back in the depression, (no I am not that old, but got this story from stepmother), candy was hard to get or afford to buy. Potatoes, sugar, and peanut butter were items you could get with stamps so a mother, who wanted to give her children a treat, came up with this recipe. It is very sweet so you can only eat one slice, but sooo good. I make this at holidays and you can add food coloring to match the holiday (ex. red for Valentine and Christmas, green for St. Patricks, orange for Halloween, or divide into three bowls and make red, white, and blue for patriotic holidays)

Ingredients For potato candy

  • 1 box
    10x powdered sugar (you may need a little extra)
  • 1/4 c
    butter, melted
  • 1 Tbsp
    canned milk (evaporated)
  • 2 slice
    thin slices of cooked potato (if you make them to thick you better have a whole extra box of powdered sugar. the more potato the more sugar you will need)
  • 1 tsp
    vanilla
  • 1 jar
    peanut butter (you won't use whole jar so if you have a partial jar you will be fine)

How To Make potato candy

  • 1
    Place all ingredients in large bowl; mix well. Work into a ball of dough. Needs to be consistency of rollable dough.) Add extra powdered sugar until it is this consistency. Divide into 4 equal parts. Roll out each part onto wax paper using powdered sugar to coat paper instead of flour. Spread peanut butter over dough. Roll up and place onto a plate. Do this with each section. Coo. in refrigerator for about an hour, then slice into small wheels and place onto plate for serving. Left overs put in air tight container.
